Grilled Eggplant Salad Recipe

Try the easiest Grilled Eggplant Salad Recipe. prepared just with fresh eggplants, garlic, extra virgin olive oil, freshly basil. Perfect as an appetizer, salad to accompany various main dishes.

2 - large eggplants, thickly sliced

1 - garlic clove, minced

3/4 - cup extra virgin olive oil

2 - tbsps balsamic vinegar

6 - freshly basil or parsley leaves, minced

- additional extra virgin olive oil

- salt and pepper to taste


In a medium bowl combine the olive oil, the balsamic vinegar, the garlic clove, basil leaves, salt and pepper. Whisk all to combine. Wash, dry and thickly slice the eggplants. Brush both sides of each eggplant slice with this mixture. Place a grilled pan over medium heat and grill the eggplant slices for 4-5 minutes per sides, until softened and slightly brown, but not burned. When you finish cooking all the eggplant slices, let them cool, preferably to room temperature. Place them into a serving plate, sprinkle with the additional olive oil, garnish with the basil leaves, season with salt and pepper if necessary. Toss gently and serve
