Eggplants with Mushrooms Recipe

6 - large eggplants, cut into medium cubes, skin on

500g - mushrooms, sliced

6 - tomatoes, diced

3 - garlic cloves, thinly chopped

5 - tbsps extra virgin olive oil

2 - freshly minced parsley

- salt and pepper to taste


Heat the oil in a large sauce pan. When it is hot add the garlic cloves, let brown for 1 min and remove from oil. Add the cubed eggplants, season with salt and pepper, cover and cook over medium heat for about 15 minutes, stirring carefully again and again. When the eggplant is almost done, add the sliced mushrooms and cook for a few minutes. After about 10 minutes add the diced tomatoes, stir, cover and cook for other 10 minutes. Season with salt and pepper if necessary, add the freshly parsley and cook for 5 minutes. Remove from fire and serve warm.
