Vegetable Rolls Recipe


Vegetable Rolls Recipe is a so quick and easy recipe, make a great snack or you can use itto accompany second dishes. This recipe is ideal for veggies and non veggies, and they' re a great lunchbox alternative or when organizing picnics. You can make them, freeze prior to baking and the result is the same. You can use frozen-ready puff pastry instead of savory cabbage leaves.

INGREDIENTS


50g - bacon slices

- broth

- chive

1 - egg

100g - fontina or mozzarella cheese

200g - frozen vegetables for soup

50g - grated Parmesan cheese

8 - large savory cabbage leaves

- marjoram

- salt and ground black pepper to taste

4 - tablespoons extra virgin olive oil

100g - white rice


DIRECTIONS


Boil the savory cabagge leaves into salted boiled water for about 7-8 minutes. Drain and pat dry with kitchen towel. Place on a cleaned surface and allow to cool. Boil some chive (about 10-15), drain, allow to cool and bind two to two. Boil rice into salted water until halfway through cooking, sprinkle with two tablespoons extra virgin olive oil and set aside. Place a large frying pan over medium heat, add two tablespoond extra virgin olive oil and the frozen vegetables. Unfrozen them for 10 minutes, mixing often. Cut fontina or mozzarella cheese into small cubes, toast the bacon slices into a pan without oil. When bacon slices are crisp, remove from pan, slice finely and spread over savory cabagge leaves. In a large bowl mix the boiled rice with cooked vegetables, the cubed cheese, grated Parmesan cheese, 1 tablespoon minced marjoram, season with salt and pepper. Stir to combine and set aside for 5 minutes. Spoon each savovy cabagge leaf with vegetable mixture and roll up to enclose filling. Fix or tie well with the formed chive. Place the Vegetable Rolls into a large casserole, add broth or just salted water, cover and let cook over low heat for 30 minutes. When Vegetable Rolls are tender remove from casserole ans place them into a serving plate. Spread over the butter and grated Parmesan cheese. Serve immediately. If you prefer you can place them in the oven (200 Degrees C) just for 20 minutes, so they become a little crispy. ACCOMPANY with a red wine.
