Stuffed Zucchini Recipe

Stuffed Zucchini Recipe is one the tastiest, Italian traditional stuffed vegetables recipe, prepared with zucchini, beef pulp, Italian sausage, tomatoes, extra virgin olive oil and Parmesan cheese. You can serve stuffed Zucchini as an appetizer or as a main dish, too.

6 - long zucchini

500g - beef pulp

100g - Italian sausage

1 - egg, beaten

1 - garlic clove

1/2 - cup Parmesan cheese, grated

1/2 - cup bread crumbs

1/2 - cup milk

1/2 - cup can crushed tomatoes

1/2 - cup extra virgin olive oil

- salt and pepper to taste


Preheat oven to 200 degrees C and lightly grease a deep baking dish. Boil zucchini for 5 min in abundant salted boiling water. Drain and cut in half lengthwise. With a spoon, scoop out the seeds. Reserve and chop all the seeds for the stuffing. In a bowl mix together the zucchini seeds, the beef, the sausage, the garlic and all the remaining ingredients. Place the mixture equally into all the zucchini halves and place them into the baking dish. Bake in the preheated oven for about 35 min, till the surface is lightly brown. You should place a cookie sheet underneath the baking dish because it tends to bubble over and splash. Remove from fire, cover with a foil and let rest for 10 minutes before serving.
