Stuffed Tomatoes Recipe Stuffed Tomatoes Recipe is perfect for a second dish, to accompany meat or fish, as well. This is can be presented to vegans, too. Stuffed Tomatoes should be covered with aluminum / baking paper, because cooked in this way all the products in general, not only vegetables, results more aromatic.

INGREDIENTS


8 - medium tomatoes

300g - fresh spinach

2 - scallions or onions

100g - Parma ham, cubed, or bacon

2 - tablespoons green baby beans, boiled

40g - grated Parmesan cheese

- extra virgin olive oil

- salt to taste


DIRECTIONS


Slice tops off tomatoes. Reserve tops. Scoop out tomato flesh and seeds, being careful not to break tomato shells. Season with salt. Wash and drain the fresh spinach, place them into a large frying pan, with a little olive oil and cook for 3-4 minutes. Drain again. Brown the scallions with a little olive oil for 3 minutes, add the cubed ham, cook for some minutes, add the spinach and beans. Stir all the ingredients, in order to combine, and allow to rest for some minutes. Preheat oven to 220 Deegres C. Fill each tomatoe with the prepared filling. Brush with oil the baking paper, place the stuffed tomatoes, sprinkle with the grated Parmesan cheese, close well the baking paper and bake for 30 minutes. Once baked, serve immediately. This dish could be accompanied with a red wine.
