Baked Eggplants Recipe

Let's prepare together this tasty Baked Eggplants Recipe dish. EGGPLANT is one of the most common vegetables, that is used for salads, just fried, for ragu, to prepare parmesans, etc. Baked eggplants are really tender and the advantage is that there 's not the grease of frying. You can prepare this delicious dish especially in spring and summer, because vegetables are more freshly and tasty.

6 - medium eggplants

800g - ripe tomatoes, or can diced tomatoes

120g - Provolone or Mozzarella cheese

2 - medium onions

6 - anchovies fillets

2 - tablespoons chopped capers

2 - tablespoons minced basil

- extra virgin olive oil

- salt and pepper to taste


Clean, wash, pat dry eggplants. With a knife cut into sliced, not too fine and over spread with salt. Let sit for about 1 hour. Place a large frying pan over medium heat, add the extra virgin olive oil, the chopped onion and brown for 3-4 minutes. Add the cubed tomatoes, capers and anchovies fillets( cleaned and finely minced). Cook for 3 minutes, and add the cubed cheese. Mix to combine and remove pan immediately from heat. Place eggplants into a greased baking dish and spread over the prepared sauce. Preheat oven to 180 degrees C, bake for 30 minutes, or until eggplants are tender and lightly brown, but not burned. Remove BAKED EGGPLANTS from oven, allow to rest for 5 minutes and serve immediately.
