Artichoke Pancakes with Goat Cheese Recipe

400g - fresh artichokes hearts

2 - lemons, cut in half

350g - goat cheese

5 - large eggs

2 - tbsps all

100g - fresh bread, chopped

- bowl of ice water

5 - tbsps extra virgin olive oil

2 - cups cream

2 - fresh minced parsley

- salt and pepper to taste


Preheat the oven to 180°C. Place the artichokes in a pot with cold water, squeeze the lemons and add their juice into the water containing the artichokes hearts. Cook over medium heat for about 20 minutes, or until artichokes are tender. Transfer them in a large bowl containing the ice water. When they are cold enough season with salt and pepper, add the minced fresh parsley. In a large bowl place the chopped bread, the cream, the eggs, the goat cheese and the flour. Season with salt and pepper and toss well all the ingredients. Arrange the artichokes in 6 small bowls and place over the cheese mixture. Bake for about 15 minutes, until the artichoke pancakes are golden and the cheese is melted. Serve the artichoke pancakes warm.
