Lentils Sausage Soup Recipe


Lentils Sausage Soup Recipe is the one which we can prepare during all the seasons of the year, because is low - fat, simple and not too much expensive. It is served with some grilled bread slices, top with grated Parmesan cheese or salted ricotta and sprinkled with some lemon juice.

INGREDIENTS


250g - lentils, picked over and rinsed

100g - Italian sausage

200g - potatoes, peeled and cut in half

1 - carrot

1 - celery

2 - tablespoons fresh minced parsley

1 - garlic clove

1 - laurel leaf

1 - saffron package(optional)

3 - cups chicken stock or water

2 - tablespoons can diced tomatoes

- extra virgin olive oil

- salt and ground black pepper to taste


DIRECTIONS


Rinse lentils. Clean, wash and chop all the vegetables. Peel the garlic clove, and chop in half. You can cook for some minutes all the ingredients into a large frying pan, sprinkling with oil or place them immediately into a pot or better into a pressure cooker, if you have one, so you reduce cooking time. Put lentils, sausage and vegetables into a pressure cooker, add the laurel leaf, diced tomatoes sauce, chicken stock or water, and saffron(optional). Mix all carefully, regulate with salt and pepper and place the pressure cooker over medium heat. Cook for 5 minutes and then reduce heat. Cook over a very low heat for 15-20 minutes. Cook for some other minutes over low heat, but without covering them. Serve warm  LENTILS - SAUSAGE SOUP into individual plates, sprinkling a little oil and top with some grated Pecorino/ Parmesan cheese if you prefer. WINE: a red one!
