INGREDIENTS


1 kg - clams

200g - baby patatoes

1 - large ripe tomato

2 - baby onions

1 - carrot

1 - small celery

1 - garlic clove

1 - tablespoon fresh chopped parsley

2 - homemade bread slices

4 - tablespoons extra virgin olive oil

- salt and ground black pepper to taste


DIRECTIONS


Clean, wash clams and place into a large bowl with abundant salted cool water. Let rest there for 1 hour. Peel patatoes, cut into diagonal pieces and cook for about 3 minutes into a pot with abundant salted water. Drain in a colander. Dice the homemade bread slices. Place a frying pan over medium heat, pour half of the olive oil and add the diced bread. Cook until bread becomes lightly brown. Clean, wash and chop finely baby onion, and brown with the remaining olive oil. Clean, wash and pat dry all the other vegetables. Chop tomatoes, celery and carrot (peeled) into julienne. Add all the vegetables to the browned baby onions. Add the peeled garlic clove and cook for 5 minutes. Season with salt and pepper and continue to cook over high heat until the liquid evaporates. Add clams and cook for 3-4 minutes, add the toasted diced homemade bread, mix well to combine. Preheat oven to 220 Degrees C and prepare 4 aluminum foils. Place vegetables and clams into each aluminum foil and close well. Put into a baking dish and bake for 10 -15 minutes. Remove from oven, use as a pasta dish sauce or just simply. Serve immediately, accompanied with a white wine.
