Shrimp with Sweet Peppers Recipe

Shrimp with Sweet Peppers Recipe served as a summer appetizer or a second plate is perfect for spring / summer seasons, grilled , roasted or baked is great in all these ways. In this recipe is presented the most lightly version, just baked, with some extra virgin olive oil, salt and pepper

400g - shrimps, cleaned and washed

200g - green sweet peppers

1 - garlic cloves

4 - tablespoons extra virgin olive oil

1 - bunch fresh parsley

- salt and pepper to taste


Clean, wash and pat dry shrimp and sweet peppers. With a knife cut peppers in half and remove seeds. Place a frying pan over medium heat, pour in 2 tablespoons extra virgin olive oil, brown garlic for 1-2 minutes. Remove garlic clove from oil and add the halved Sweet Peppers and cook over high heat for 2 minutes, until tender and lightly brown. Season with salt and pepper. Prepare a large aluminum foil, place the browned Sweet peppers in the centre and spread over them Shrimp. Season with salt and pepper, sprinkle with the remaining extra virgin oil and the fresh chopped parsley. Close well the aluminum foil. Preheat oven to 220°C. Place it in the oven and bake for 5-7 minutes. Remove from oven, allow to rest for 5 minutes and serve immediately, accompanied with a good White Wine.
