Sea Bass with Asparagus Recipe

INGREDIENTS


8 - large sea bass fillets

8 - finely bacon slices

1 - bunch of asparagus, woody ends removed

1 - baby onion, finely chopped

3 - tablespoons extra virgin olive oil

4 - tablespoons white wine

2 - tablespoons fresh minced parsley

- salt and pepper (optional)

- lemon wedges to garnish


DIRECTIONS


Divide sea bass fillet and bacon slices in half lengthwise. Place each bacon slices into each sea bass fillets. Roll all fillets and fix well with toothpicks. Put asparagus in a pot with abundant salted water, and boil for just 5 minutes. Drain in a colander.  Place a frying pan over medium heat, pour in the olive oil, add the chopped baby onion and cook for 2 minutes. Add boiled asparagus, cook for other 2 minutes, pour in 2 tablespoons white wine and let evaporate. Remove pan from heat and set aside. Place aluminum foil / baking paper into a baking dish, put asparagus with their sauce and top the sea bass fillets. Season with salt and pepper, spread the minced fresh parsley and close well. Preheat oven to 220 Degrees C. Bake Sea Bass with Asparagus for about 15- 18 minutes, or depending on fillets thickness. Remove Sea Bass with Asparagus and allow to rest for 5 minutes before serving. Accompany with a White Wine.
