INGREDIENTS


4 - salmon fillets (about 2 cm high), boneless

500g - baby spinach

2 - tablespoons white wine (optional)

1 - tablespoon green or black pepper

2 - laurel leaves

1/2 - teaspoon paprika

- extra virgin olive oil

- salt to taste

2 - tablespoons lemon juice (optional)


DIRECTIONS


PREP: 20 min COOK: 15 min DIFFICULTY: easy MAKES 4 SERVINGS Preheat oven to 200 Degrees C. Prepare 4 aluminum foils and brush each of them with olive oil. Place salmon fillets into each foil, sprinkle with wine and lemon juice if you prefer, or just with a little olive oil. Place in the centre of each salmon fillet half laurel leaf, and spread over with the pepper and paprika. Season with salt and close well the aluminum foils. Put in a baking dish and bake for 15 - 20 minutes. As Salmon with Paprika baked prepare spinach. Clean and wash well spinach. Place a large frying pan over medium heat, pour 3 tablespoons extra virgin olive oil, add 1 garlic clove and brown just for 2 minutes. Eliminate garlic and place in spinach. Cook for 5 minutes and keep warm until you serve it with salmon fillets. Remove Salmon with Paprika from oven, allow to rest for 5 minutes, eliminate the aluminum foil and place into a serving plate, accompanied with the spinach. ACCOMPANY with a white wine.
