Cod Fish Rolls Recipe

Cod Fish Rolls is an amazing recipe to prepare during hot summer days. It's marvellos dish for all the persons who love fish, not only for its nutrient benefits, but for its elegant and sophisticated presentation. Cod Fish Rolls are as delicious as easier to prepare, and the flavour combinations are marvellous. You can use other kind of fish if you prefer, but make sure you use fillets about 1/2 inch thick, so the filling will stay all inside. This can be served with a simple fresh green salad, with rice or pasta or grilled vegetables.

8 - cod fish fillets

1 - baby onion

1 - baby carrot

4 - champignon

1 - small celery rib

1 - fresh parsley bunch

2 - tablespoons pine nuts

4 - pancarré slices

6 - tablespoons extra virgin olive oil

- salt and black ground pepper to taste


Season with salt and pepper cod fish fillets. Clean, wash and finely chop the carrot, baby onion, celery and champignon. Place a large frying pan over medium heat, pour in 1 tablespoon extra virgin olive oil and add all the chopped vegetables. Cook until tender and lightly golden. Wash, pat dry and finely mince the frsh parsley. Lightly roast pine nuts into another pan. Finely chop pancarré bread crumbs. Mix all the ingredients into a bowl, except cod fish fillets. Season with salt and pepper. Sprinkle with 1 tablespoon extra virgin olive oil and mix all again carefully. Spread one side of each cod fish fillet with a generous amount of the prepared mixture. Roll up starting on the short side and secure well with kitchen string or toothpicks. Preheat oven to 200 Degrees C. Place Cod Fish Rolls into a lightly greased baking dish or firstly place each of them into oiled baking papers, paying attention to close well. Bake for about 20 minutes, or till fish flakes easily with a fork. Accompany with a White Wine.
