Easy Broccoli and Potato Salad Recipe

Looking for an easy, healthy and tasty side dish recipe? Try this simple Broccoli and Potato Salad Recipe, prepared just with boiled broccoli and potatoes, drizzled with olive oil - balsamic vinegar mixture. This salad with broccoli and potatoes can be served with a veal fillet, roasted chicken or baked fish, as well.

1 - garlic clove, thickly minced

800g - fresh broccoli

- freshly minced parsley

4 - medium-size yellow patatoes

- salt and pepper to taste

1 - small red onion, thickly chopped

3 - tbsps balsamic vinegar

3 - tbsps extra virgin olive oil

2 - tbsps minced chives


Wash broccoli and potatoes. Bring a large pot with abundant salted water to a boil over high-medium heat and boil potatoes for about 15 min, until tender but still firm. Drain, cool for about 5 minutes. Lay out into a a serving plate. Bring another large pot of salted water to a boil, add broccoli and cook for 5 minutes, until al dente. Drain and add to the potatoes. In a small bowl combine together the onion, garlic, parsley, chives, olive oil, balsamic vinegar, salt and pepper and pour the mixture to the vegetables. Serve immediately at room temperature or let salad marinate for about 30 minutes if you want to have a more tasty flavor.
