Spelt Salad with Spinach and Feta Recipe

This Spelt Salad with Spinach and Feta Recipe is great because is prepared with one of the best cereals as spelt, which contains fibre, dietary minerals and vitamins with the addition of fresh spinach ( extremely rich in antioxidants, vitamins, iron, calcium, etc) and feta cheese ( traditional Greek Cheese). This is a very simple recipe to prepare and you can take it at work placed into a hermetic bowl or at the beach.

200g - spelt

70g - fresh baby spinach

100g - julienne carrots

200g - feta cheese

- freshly mint

- extra virgin olive oil

- salt to taste


Wash well spelt under cool water until water becomes clean and transparent, and then boil spelt over low heat for about 20 minutes into pot with lightly salted water, or until it is tender. Remove pot from heat and drain spelt in a colander. Wash again under cool water in order to stop cooking. Pour the boiled spelt into a large bowl and allow to cool. Clean, wash and pat dry baby carrots and the fresh mint ( 5-6 leaves). Peel, wash and julienne carrots. Place all these ingredients into a salad bowl, add the cooled spelt, mix gently and add feta cheese, cut into small cubes. Season with salt as necessary and sprinkle with some extra virgin olive oil. Mix gently to combine, cover with a plastic wrap and place in the fridge for at least 2 hours before serving.
