Red Beet Salad with Goat Cheese Recipe

The goat cheese contains lots of healthy properties, the red beet as well because is an excellents source of folate, betaines and manganese, so their combination is as perfect as tasty. So why not prepare this healthy Red Beet Salad with Goat Cheese Recipe, simple and does' t requires a lot of time.

1 kg - red beets

150g - goat cheese

300g - green baby beans or freshly rocket

- tbsps extra virgin olive oil

2 - tbsps balsamic vinegar

1 - garlic clove, minced

2 - chopped walnuts

- salt and pepper to taste


Clean, wash and place the red beets in a large pot with abundant boiling water. Cover and cook the red beets for about 30 minutes, until tender. Drain in a colander, allow to cool and peel. Slice the red beats and arrange them into a plater. Place another pot with water to a boil. When the water boils, add the green baby beans and cook for about 4 minutes or instead of them add just freshly rocket. Remove from the boiling water and place them into another pot with cold water. Drain and set aside. In a small bowl mix together the olive oil, balsamic vinegar, garlic, salt and pepper. Take a serving plate, arrange firstly the sliced red beets, all around the greens beans or freshly rocket, chopped walnuts and top with the crumbled goat cheese. At last drizzle with the mixture. Serve immediately.
