Fennel and Orange Salad Recipe

Fennel and Orange Salad Recipe is a winter salad, that accompany lots of second dishes, like veal fillets, grilled fish, hamburger, meatballs, etc. Fennel and orange bring the best out in each other - orange is refreshing and fennel stimulate the appetite, making this salad a perfect starter.

3 - fennels

1 - large orange

2 - medium carrots

4 - tablespoons extra virgin olive oil

1 - 1 tablespoon balsamic vinegar

- salt and pepper to taste

In a bowl mix together the extra virgin olive oil, balsamic vinegar and a little salt. Add carrots, thinly sliced and let marinate for 10 minutes. Clean, wash fennels. Remove the tough outer leaves of the fennel and cut off the shoots that stick out at the top. Keep the green fronds. Slice very finely with a sharp knife and add to the marinated carrots. Finely slice the orange and add to the mixture. Sprinkle with some other olive oil and balsamic vinegar if necessary. Toss all to combine and place into a serving plate. garnish with the green fronds. Cover with a plastic wrap, and let marinate at room temperature for 30 minutes.
