Chicken Salad Recipe

Looking for an easy, fresh and light salad to prepare on your own, without spending o lot of money in restaurants? Chicken Salad Recipe is the answer for you. It can be served as an appetizer, as a salad or as a unique dish as well, because it has combined so many different ingredients.

200g - fresh green salad

2 - skinless, boneless chicken breasts

8 - cherry tomatoes, halved

- diced mozzarella or parmesan cheese

2 - slices crusty white bread, small diced

4 - tablespoons liquid greek yogurt or mayonnaise

- extra virgin olive oil

- salt and pepper to taste


Clean the fresh green salad, wash under cool water, drain, pat dry and tear into large pieces. Put salad into a bowl. Cut in half the cherry tomatoes and add to the salad. Heat grill or a large frying pan over medium heat, pour in 3-4 tbsps extra virgin olive oil and add chicken breasts. Cook the chicken on both sides until tender and lightly brown. Season with salt and pepper. Check if it’s cooked by poking the tip of a sharp knife into the thickest part; there should be no sign of pink and juices will run clear. Cut the bread crust into small cubes and fry into the remaining oil where you cooked chicken breasts. Cook just for 2-3 minutes and remove from heat. Pour in the bowl the liquid greek salad or mayonnaise and mix well to combine. Slice the chicken breasts length-wise and add to the salad. Add the browned diced crust bread, the diced mozzarella or parmesan cheese and season with salt if necessary. Drizzle with some olive oil and serve straight away.
