Stuffed Calamari Salad Recipe


Stuffed Calamari Salad Recipe is a very healthy recipe, simple to prepare and doesn' t requires a lot of time to spend in the kitchen. The success of this calamari salad is the freshness of this ingredient. Prepare calamari in advance and reheat in the pan before serving, to allow the taste to be stronger, in order to improve it.

INGREDIENTS


1 kg - calamari, cleaned

200g - Parmesan cheese

600g - mushrooms

5 - pancarrè slices

20g - capers

2 - eggs

1 - glass of milk

1 - glass of white wine

1 - garlic clove

1 - small chili pepper

- extra virgin olive oil

- bread crumbs ( optional )

- salt to taste


DIRECTIONS


First of all clean calamari: eliminate interiors and the eyes. Take aside the tentacles and fins, which will be used later. Wash well the cleaned calamari under running water, drain with asorbent paper. Wash well tentacles and fins, and cut them into small pieces, which will be used for the filling. Clean and chop mushrooms, lightly cook into a pan with 3 tablespoons extra virgin olive oil, garlic clove , crumbled chili pepper and salt. Cover the pan and cook until all the liquid has evaporated. In this moment add the cubed tentacles and fins, and continue cooking over high heat for some minutes. Remove pan from heat, allow the prepared mixture to cool. Once cooled, transfer in a large bowl, add pancarrè slices soaked in the milk and wrung well, add capers and the grated Parmesan Cheese. After adding these ingredients, mix well with your hands, add some bread crumbs if necessary to give the proper consistency. With the help of a small spoon begin to fill calamari with the prepared stuffing, remembering to leave at least free one-fifth of the length. Close calamari with toothpicks, removing the excess. Lightly cook the stuffed calamari in the pressure cooker with some extra virgin olive oil on both sides, add the remaining filling, the wine and 1 glass of water. Close the pressure cooker and cook calamari for about 8-10 minutes, from when it starts to hiss. Remove pressure cooker from heat, allow to cool and serve the stuffed calamari with some freshly salad.
