Rabbit with Vegetables Recipe


Rabbit with Vegetables Recipe is a very simple and tasty recipe, perfect for autumn and winter days, to enjoy with your family. Rabbit with Vegetables is prepared by cooking rabbit meat with chopped vegetables and minced herbs, tomatoes and white wine if you prefer. You can serve it just with some grilled bread.

INGREDIENTS


1 - whole cleaned rabbit

400g - peeled tomatoes

2 - celery sticks

1 - carrot

1 - onion

2 - garlic cloves

1 - fresh parsley bunch

1 - fresh basil bunch

2 - rosemary sprigs

2 - laurel leaves

2 - sage sprigs

1/2 - white wine

1/2 - cup extra virgin olive oil

- salt and pepper to taste


DIRECTIONS


Firstly clean, wash, pat dry and chop the rabbit into pieces. Clean, wash and chop celery. Peel, wash and chop carrot. Do the same with onion. Wash well, pat dry parsley, basil and finely mince. Wash also rosemary, sage, laurel leaves and tie with a kitchen string. Place a large frying pan over medium heat, pour in the extra virgin olive oil, add garlic cloves and brown just for 2 minutes, as they aromatize oil. Remove from oil. Add all the chopped vegetables and herbs, too. Cook for some minutes and add the chopped rabbit. Cook all over high flame for about 15 minutes, season with salt and pepper, add the white wine and continue to cook over low heat. Add the chopped tomatoes, cover and cook over very gentle flame for about 50 minutes, until meat is tender and liquid is thick. Serve warm with some grilled bread.
