Rabbit Terrine Recipe

INGREDIENTS


2 - boned- white farmed rabbits

150g - bacon, finely sliced

1 - onion, finely chopped

4 - tbsps fresh minced rosemary

4 - tbsps fresh minced parsley

4 - tbsps fresh minced thyme

2 - garlic cloves

1 - tbsp balsamic vinegar

4 - cups white wine

1 - gelatin package

- salt and pepper to taste


DIRECTIONS


Place rabbits in the terrine, add the white wine, the chopped onion, the minced garlic, rosemary, a little parsley and thyme and season with pepper. Mix all together until well combined and cover it with a cling film. Refrigerate the rabbit terrine over night to allow the flavours to combine. After marinating all the ingredients,remove all the liquid and the herbs from the terrine and place all in a bowl. Chop the meat preferably by hand, as you have more texture. Preheat the oven to 160 degrees c. Take a terrine, lay out the bacon slices, place a rabbit layer, season with a little minced thyme and parsley and continue so, until all the meat has finished. Filtrate the liquid and pour all into the terrine, covering the rabbit, leaving 1 cm from the edges. Prepare the gelatin according to package directions, pour half all over the terrine surface, cover the terrine and cook for 1 h 20 minutes, until it is set. The terrine is cooked when it begins to come away from the sides and the fat runs clear. Let cool in the oven. Remove the foil from the terrine. Filtrate the cooking liquid, pour in a bowl, add the balsamic vinegar and the remaining prepared gelatin. Mix all and pour into the terrine. Cover the terrine with a cling film and place it in the fridge. Leave the rabbit terrine in the fridge for at least one hour before serving. You could serve the terrine with various salads, boiled vegetables, etc.
