Lamb Zucchini Recipe

Looking for a fresh, easy and tasty lamb recipe? Try this simple Lamb Zucchini Recipe, prepared in just a few minutes, cooking together lamb meat, fresh zucchini, sun-dried tomatoes, herbs and extra virgin olive oil.

1 kg - lamb meat. cubed

800g - zucchini

120g - sun-dried tomatoes or cherry tomatoes

2 - garlic cloves, thinly chopped

5 - tablespoons extra virgin olive oil

1 - tablespoon dried origan

100g - small onions


Heat the oil in a large casserole over low heat and add the chopped meat. Season with salt, add the garlic, and after 3 minutes add the sun dried tomatoes or cubed cherry tomatoes. Add the dried oregan. Cook for about 10 minutes. As the meat cooks prepare zucchini. Wash and slice them a julienne. Add to the casserole, together with the peeled small onions. Stir carefully and cook until the liquid evaporates, but not totally. Remove the casserole from fire, let rest for 5 minutes and serve warm. You prepare lamb zucchini in the oven instead of cooking in the pan, if you prefere. If so, bake in a preheated oven to 180-200°C for about 1 hour.
