Zucchini Chicken Rolls Recipe

INGREDIENTS


600g - chicken breast

2 - long green zucchini

2 - carrots

1/2 - cup white wine

- extra virgin olive oil

- salt and pepper to taste


DIRECTIONS


Clean, wash and pat dry zucchini and carrots. Peel carrot and slice them lengh-wise. Cut zucchini too in the same way. Place a pot with abundant salted water to a boil, and boil the sliced carrots, zucchini just for some minutes, until they are tender. Drain in a colander and let cool. Remove skin and bones from chicken breast, with a sharp knife cut into thinly long slices/ cutlets. Season chicken cutlets with salt and pepper. Lay them into a working surface and place in each of them two long zucchini and carrot slices. Roll each of them and fix carefully with toothpicks. Place a large frying pan over medium heat, pour 4 tablespoons extra virgin olive oil and add chicken rolls. Cook for about 5 minutes on each side, or until meat is tender and lightly brown. Two minutes before removing from fire, add the white wine and let it evaporate. Remove chicken rolls from pan, place into individual serving plates and serve with boiled zucchini and carrots. Serve warm accompanied with a white wine if you prefer.
