INGREDIENTS


1 - boneless whole chicken, about 1,2 kg

200g - spinach

2 - boiled medium carrots

2 - boiled eggs

100g - sliced ham

1 - tablespoon minced dried herbs

1 - bunch fresh sage

1 - bunch fresh rosemary

1 - bunch fresh oregano

- extra virgin olive oil

- salt and pepper to taste


DIRECTIONS


With a sharp knife open the boneless chicken, like a rectangular. Boil the eggs and carrots. Clean, wash, drain and cook spinach in a large frying pan for about 5 minutes. Remove from pan, finely chop and place into a bowl. Let boiled eggs, carrots and spinach cool. Season boneless chicken with salt, pepper and the minced dried herbs. Begin to stuff chicken: lay all over the chicken surface the sliced ham, continue with another layer of chopped boiled spinach. Place the whole boiled carrots and eggs over spinach layer. Place one carrot, then one whole boiled egg, then one carrot and at the end the other egg. Preheat oven to 180° C. Close well the Stuffed Boneless Chicken with kitchen string, placing the fresh bunches of sage, rosemary, oregano under the string. Season all the chicken surface with salt and pepper, sprinkle with the olive oil and place in the preheated oven. Bake for about 1 hour, or until tender and lightly brown. If you prefer cover the Stuffed Boneless Chicken with aluminum foil for the first 30 minutes. Remove from oven, allow to cool for about 20 minutes and slice it into rounded slices. Serve in a beautiful serving plate, accompanied with a simple white rice, with a fresh green salad and roasted potatoes...
