Roasted Chicken with Baby Potatoes Recipe

The chicken must be whole, no skin or bones removes so it becomes crispy outside and tender inside. If you prefer a more aromatic version, you can marinate chicken 1 hour before cooking with lemon juice and herbs.

1,5 kg - free range chicken

1kg - baby potatoes

- extra virgin olive oil

- kosher salt and freshly ground black pepper to taste


Rinse the chicken with cool water inside and outside, let it cool in a colander for some minutes and then pat dry well with chicken towels. Season with salt and pepper outside and the cavity too. Place the chicken, breast - side up in a baking dish. If you want to hold its shape, tie the chicken legs together with chicken twine. Clean, peel, wash potatoes and toss them all around the chicken. Season all with salt and pepper and drizzle with the oilve oil. Preheat oven to 180°C and roast chicken with baby potatoes for about 40-50 minutes, rotating it every 20 minutes and baste with its liquid. Bake until chicken and potatoes are golden brown, tender and the skin crispy. Remove the roasted chicken with baby potatoes to a serving plate and allow to rest for 10 minutes before serving, so the juices settle back into the chicken before slicing. Serve warm with the roasted baby potatoes.
