INGREDIENTS


1,5 kg - whole turkey, giblets removed, washed and dried

- kosher salt and freshly ground black pepper to taste

- extra-virgin olive oil, for drizzling


DIRECTIONS


Wash with cool water the turkey, drain well with kitchen papers and season with salt and pepper inside its cavity. Separate the skin from the breast meat with your fingers, starting at the top of the breast and sliding to the right and left, then working down, seasoning with salt and black pepper. Then sprinkle again the turkey' s skin with salt, pepper and extra virgin olive oil. Place the turkey on a sheet tray and cover with plastic wrap. Refrigerate overnight or up to 24 hours so the flavors can marry. Remove the turkey from the refrigerator and bring to room temperature. Set a rack to the lowest position in the oven and preheat it to 150°C - 170°C. Tie the legs of turkey together with kitchen string and tuck the wings tips under. Place the turkey into a dip roasting pan, drizzle again with some extra virgin olive oil and sprinkle with salt and pepper. Roast the turkey for about 1-2 hours or until is tender and golden brown. Remove the roasted turkey from oven, transfer to a platter, cover loosely with aluminum foil and allow to resy for 30 minutes before carving.
