Chicken with Rice Recipe

1 - whole chicken

1 - large onion

2 - garlic cloves

4 - ripe tomatoes

2 - small peppers

100g - ham

30g - butter

1 - dried bay leaf

1 - teaspoon vinegar

1 - tablespoon dried white wine

3 - pepper grains

200g - pilaf rice

50 g - olives


Clean and wash well all vegetables. Remove seeds from peppers and cut them into small pieces. Cut tomatoes and ham into small cubes, as well. Clean, wash and pat dry well chicken with kitchen papers, cut it nto pieces. Place a deep casserole over medium heat, melt the butter or instead of butter you can use extra virgin olive oil, add garlic cloves, let brown just for 1-2 minutes and remove from oil. Add the chopped onion, the cubed peppers and cubed ham. Add the dried bay leave and cook for some minutes, then add the chicken pieces and olives. Cook until all the ingredients are tender and have a golden color. Pour in the wine, vinegar and cover with water or chicken broth. Season with salt and pepper, cover and cook until chicken is tender. Add rice and continue cooking until rice is almost cooked. Remove casserole from heat, and allow to rest for some minutes ( always covered ) before serving.
