Chicken with Mushrooms Recipe

If you want to carry out a full menu, you should prepare a simple risotto with saffron and mushrooms.

1 - chicken, about 1,5 kg

700g - sliced mushrooms

1 - onion, chopped

2 - garlic cloves, thinly chopped

6 - tablespoons extra virgin olive oil

50g - butter

3 - tablespoons freshly chopped parsley

2 - tablespoons freshly minced thyme

1 - cup milk or chicken broth

- salt and pepper to taste


Wash, dry and cut the chicken into big cubes. Wash, clean and chop the mushrooms. Melt the butter in a large pan over low heat, add 2 tablespoons olive oil and brown the garlic cloves for about 1 minute. Remove from oil, add the mushrooms, the thyme, the parsley, season with salt and pepper. Cook for some minutes. Take another large pan, heat the oil over low heat and cook the chicken. Season with salt and pepper. Add the onion, brown till golden and pour the milk. Cover and cook for about 30 minutes, till the milk evaporates. Add the mushrooms, stir and continue to cook for other 10-15 minutes, over low heat. Remove from fire and serve warm accompanied with a good risotto with mushrooms and saffron.
