Chicken with Artichokes Recipe Chicken with Artichokes Recipe is very easy to prepare and for them who are always looking for a lower calorie meal. In this recipe is made the combination chicken - artichokes, and if you want to give a more decisive taste to this chicken recipe, you can use wine instead of water, or chicken broth instead of wine, lemon juice, etc. You can serve it with rice pilaf.

800g - boneless, skinless chicken meat, large dice

6 - artichokes hearts

1 - cup chicken broth

1/2 - cup white wine

1 - lemon

100g - butter

2 - tablespoons extra virgin olive oil

2 - garlic cloves

2 - tablespoons all

2 - tablespoons fresh minced parsley

- salt and pepper to taste


  Flour the chicken large diced pieces and roast with extra virgin olive oil and garlic clove into a large frying pan for about 10-12 minute, until golden( medium heat). Season with salt and pepper. Remove chicken pieces from pan, and set aside because you will terminate their cooking in the oven later on. Boil artichokes into a pot with salted boiled water ( sprinkle some lemon juice ), for 5 minutes, or until artichokes become tender. Drain in a colander. Mix 3 artichokes hearts into a mixer, until it becomes a pureé. Cut into 4 parts the remaining artichokes hearts. Pour in the same frying pan that you roast chicken meat the chicken broth, add the white wine and at last the artichokes pureé, that you prepare in the mixer. Let cook for 2-3 minutes, until the sauce becomes smooth, homogenous and thick. Preheat oven to 200 Degrees C. Bake chicken pieces for 10 minutes, remove from oven and keep warm. Place another pan over medium heat, melt the butter, add artichokes hearts, garlic and the minced parsley. Cook just for 3-4 minutes. Place the prepared artichokes pureé into individual serving plates, put on the chickens pieces and garnish with the roasted artichokes pieces. Serve warm and accompany with a white wine if you prefer.
