Chicken Salad with Green Apple Recipe is a very simple salad recipe to prepare during all the season of the year, is low fat and can be served as a salad or as a main dish, if accompanied with a piece of focaccia/ grilled bread. Perfect as a lunch box, or when you go at the beach, or when organizing a picnic in the countryside.

INGREDIENTS


20g - almonds, blanched

400g - chicken breast

- extra virgin olive oil

1 - fresh basil bunch

100g - fresh rocket

1 - garlic clove

1 - green apple

1 - lemon or lime

100g - natural white yogurt

- salt and pepper

Sauce Ingredients

1 - small baby onions

- vegetable broth


DIRECTIONS


Cook the chicken in the broth for about 15 minutes and let it cool in the same cooking liquid. Place the green apple in the fridge until the moment of slicing. Cut the almonds into strips and toast in a large pan just for some minutes, paying attention not to burn them, give a golden color. In a bowl squeeze the lime or lemon juice and mix the yogurt with a tablespoon of olive oil, peeled minced garlic, and chopped herbs. Add two pinches of salt, freshly ground pepper and put it in the fridge. Clean, wash and pat dry rocket. When chicken is cool, cut it into thin slices and place into a salad bowl. Slice the cold green apple finely and add to the chicken. Then add the dried rocket, the toasted almonds and the yogurt sauce. Sprinkle with some extra virgin olive oil and serve immediately.
