Chicken Porchetta Recipe

INGREDIENTS


1 - chicken, about 2kg

600g - small patatoes, diced

80g - shredded bacon

3 - garlic cloves

3 - tablespoons wild fennel seeds

4 - tablespoons freshly minced rosemary

2 - tablespoons freshly minced sage

4 - tablespoons extra virgin olive oil

- salt and pepper to taste


DIRECTIONS


Chop the bacon, add the the garlic, the wild fennel seeds, season with salt and pepper and mix all together. Stuff the chicken with this mixture and place in a baking dish. Lay out all the diced potatoes, sprinkle with the olive oil, sage and rosemary. Bake for about 1 hour and a half, until the chicken results tender and lightly brown, but not burned. Remove from oven, let rest for 10 minutes and serve warm.
