Chicken Breasts with Goat Cheese and Couscous Recipe

4 - boneless skinless chicken breasts

150g - goat cheese

160g - half

200g - couscous

1 - tbsps extra virgin olive oil

1 - tbsps lemon juice

3 - tbsps fresh minced basil

- lemon slices to decorate

- salt and pepper to taste


Butterfly each chicken breasts by slicing it lengthwise almost in half and then open to form a single cutlet. In a bowl mix together the goat cheese, dried tomatoes and 2 tbsps of the fresh minced basil. Divide the mixture into 4 parts and place each cheese filling in the centre of each chicken breasts. Roll tightly over the filling and be sure the the cheese filling is completely enclosed and form a cylinder. Close well with toothpicks. Repeat for each chicken breasts. Heat the olive oil in a large frying pan over medium heat and add the chicken breasts. Cook for about 10 minutes on each side, until lightly brown but not burned. Remove from fire, cover, set aside and let rest as you prepare the couscous. Place the couscous into a terrine, add the lemon juice, 0,5 L boiling water and let there for 5 minutes. Mix and add the remaining minced basil. Slice the chicken breasts. Arrange the prepared couscous into a serving plate, top with the sliced chicken breasts, decorate with the sliced lemon and serve.
