Chicken Breast with Fennel and Cheese Recipe

INGREDIENTS


6 - chicken breasts, boneless and skinless

1 - large fennel fennel bulb, thinly sliced

1 - garlic clove

200g - softened cream cheese

60g - grated Pecorino cheese

3 - tablespoons extra virgin olive oil

5 - tablespoons white wine

6 - large thinly bacon slices ( optional )

- salt and pepper to taste


DIRECTIONS


Preheat oven to 180 degrees C. Take the chicken breasts and with a knife create a small hole. Ran the knife up and down to create a larger pouch inside, but do not go too far because if you poke a hole on the other side, stuffing will ooze out. Slice the fennel, saute it until lightly brown and enough tender in an oiled large pan, season with salt and pepper. Add Pecorino and the softened cheese, a little water and remove the pan from heat. Mix all together with the back of a spoon and stuff the chicken breasts with the mixture by pushing it into the cavity. Wrap round with the bacon slices and sew the hole shut or use some skewers. Pour the remaining olive oil in another large pan, add the garlic and the chicken breasts and roast for some minutes. Add the wine and cook until it evaporates. Transfer all in a baking dish and bake for about 35 minutes, till the meat comes tender. Remove from oven, cover with a foil, let rest for 10 minutes before serving and slice it. Serve warm.
