Almonds Chicken Recipe

Looking for an easy, healthy and tasty chicken recipe to prepare for your family? Try this chicken with peeled almonds, and lightly sliced onion. You can use chicken breast, peeled and boneless, cut into cubes and serve it as a second dish.

400g - chicken breast, peeled and boneless

100g - peeled almonds

1 - onion

3 - tablespoons soy sauce

1/2 - teaspoon ginger, or ginger powder

- extra virgin olive oil

- salt and pepper to taste

1 - tablespoon all-purpose or corn flour


Firstly toast the peeled almonds into a large pan just for some minutes, until lightly brown. Remove the chicken peel and bones, cut it into medium cubes and let meat marinate with soy sauce and ginger powder for about 30 minutes. If you prefer can let it marinate for 2-3 other hours, so the meat becomes more tender. Then, add the flour and mix well. Place a large pan over medium heat, add 4 tablespoons extra virgin olive oil and add the sliced onion. Brown for some minutes until tender and golden, it should be a little crispy. Place into a plate. In the same pan where you cooked onion place the chicken cubes and cook for about 10 minutes, until crispy, add the browned onion and toasted almonds, pour 1/2 cup water, 2 other soy sauce ( optional) and 1 tablespoon flour. Season with salt and pepper and cook over hight heat until sauce is thick. Serve warm with a white wine.
