Veal Fillet with Vegetables Recipe

Veal Fillet with Vegetables Recipe is that kind of recipe which can be prepared during all the seasons of the year. In this recipe veal fillets are accompanied with a tomato - cucumber salad, but you can serve the veal with any other kind of salad.

700g - veal fillets

4 - large ripe tomatoes, small cubed

2 - cucumbers,small cubed

2 - small onions, finely chopped

2 - garlic cloves, peeled and finely chopped

1 - lemon juice

6 - tablespoons extra virgin olive oil

- salt and pepper to taste


Put veal fillets into a plastic bowl, spread with the olive oil and the lemon juice, cover with a plastic wrap. Let marinate in the fridge for 1 hour and turn over every 10 minutes into its sugo. Place the grill over medium heat, place the veal fillets and cook for about 15 minutes on both sides, until tender and lightly brown. Once cooked, remove from grill, place in a serving plate, cut into cubed pieces, season with salt and pepper. In a bowl mix together tomatoes, cucumbers, onions and garlic, sprinkle with olive oil, season with salt and pepper and toss to combine. Let marinate for 10 minutes. Place all the veal fillet into a serving plate, serving with the prepared vegetables. You can use any other kind of vegetables if you prefer.
