Veal Fillet in Bread Crust Recipe

INGREDIENTS


700g - ready bread dough

4 - veal fillets, 150g each

3/4 - fresh cream

70g - walnuts in small pieces

1/2 - cup white wine

30g - butter

2 - tbsps olive oil<

1 - tbsp all-purpose flour

1 - beaten egg

- salt and pepper to taste


DIRECTIONS


Begin with toasting for 2-3 minutes the small pieces of walnuts into a small frying pan. Remove from fire and chop them finely. Add them to the bread dough and the olive oil, too. Knead with your finger to mix all the ingredients, form a homogenous ball, cover with a clean kitchen towel and let rest in a warm place. Dredge the veal fillet into the flour, melt the butter into a large frying pan, and cook the veal fillet for about 3 minutes each side. Remove the meat from heat and keep it warm. Into the same frying pan ( over very high heat) add the wine, after some minutes add the cream and cook over low heat, until all becomes thicky. Taste with salt and pepper. Divide the bread into four equal parts, roll out the dough with a rolling pin into thin disks and place the veal fillets in the center of each. Close carefully with the bread dough, moistening all the surface with the beaten egg. Preheat oven to 200 Degrees C, bake the veal fillet for at least 30 minutes. Remove from oven, let it rest and then cut into slices. Serve the veal fillet in bread crust with the creamy prepared sauce.
