Stuffed Veal Rolls Recipe

8 - thin veal slices, cut as for scaloppine

70g - champignon mushrooms

2 - tablespoons fresh minced parsley

- extra virgin olive oil

4 - tablespoons grated Parmesan cheese

- salt and pepper to taste


Place veal slices between plastic wrap sheets and pound with a flat mallet, without breaking them. Season with salt and pepper and set aside. Clean, wash and pat dry leek and mushrooms with an assorbent papper. Chop  them finely.  With a sharp knife chop finely the ham. In a bowl mix together leek, mushrooms, chopped ham, minced fresh parsley and grated Parmesan cheese. Lay out the veal pieces on a clean flat surface. With a spoon put an equal portion of the filling on each slice. Wrap the meat around the filling, folding and tuck the ends like an envelope. Tie well each Stuffed Veal Rolls with kitchen string and season with salt and ground black pepper as necessary. Preheat oven to 200 Degrees C.Brush with oil 4 baking papers and plce in each of them 2 Stuffed Veal Rolls. Close well the baking papers and place on tray. Bake for 15- 20 minutes and remove from oven. Allow to rest for 5 minutes, open baking papers, remove stings and serve the Stuffed Veal Rolls with a fresh green salad, accompanied by a good red wine.
