PREP: 1h 40 min COOK: 50 min DIFFICULTY: medium MAKES 6 SERVINGS INGREDIENTS400g beef, minced200g veal, minced200g pork or Italian sausage, minced100g ricotta100g grated Parmesan cheese3 small eggs1/2 teaspoon nutmegminced parsleygingersalt and black ground pepper INGREDIENTS FOR THE OMELET4 eggs100g ricotta50g grated Parmesan cheeseminced fresh parsley40g buttersalt DIRECTIONS Place a large frying pan over medium heat, melt the butter and prepare the omelet( beat the eggs in a large bowl, add all the remaining ingredients, mix all together and cook into the pan). Once cooked put it into a plate and set aside until you prepare the spicy meatloaf. Mix beef, veal, pork minced meat in a large bowl, add the eggs, the grated cheese, species and continue with abundant chopped parsley. Form into a loaf. Lay the omelet into a baking paper and put down the spicy meatloaf. Roll the meatloaf with the omelet and close very well. Preheat oven to 200 Degrees C. Place the spicy meatloaf into a baking dish and bake for about 50 minutes. Remove from oven, eliminate the baking paper, slice and serve immediately or warm. Serve with  a good two-colurs purèe, small cubed pieces of roasted carrots and potatoes, or just a fresh green salad.
