Lemon Roast Beef Recipe


Lemon Roast Beef Recipe is a really healthy recipe, with just a few ingredients but full of taste and flavour. This is a second dish wich can be accompanied with some baby roasted potatoes and fresh green salad.

SERVES: 4-6


INGREDIENTS


1 kg - quality beef roast

2 - lemon juice

1/2 - cup extra virgin olive oil

2 - tbsp butter

1 - tbsp flour

1 1/2 - cups beef stock

1 - fresh rosemary bunch


DIRECTIONS


Combine the olive oil, the lemon juice and 1 tablespoon pepper in a large dish. Add the beef and marinate for 1 h and a half. Preheat the oven to 180 deegres C. Passing the 2 hours, transfer the beef to a baking dish,season with salt, add the fresh rosemary bunch and bake for about 1 h 30 minutes (70 degrees C). Before removing the beef roast from oven sprinkle with the other lemon juice and let bake for other 10 minutes. Remove roast from oven and cover with foil. Let rest for 20-25 minutes before slicing and serving.
