Beef with Spinach and Scallions Recipe

1,6 kg - beef fillet

1kg - fresh spinach

500g - scallions

1/2 - cup heavy cream

3 - tablespoons extra virgin olive oil

1 - cup red wine

2 - tablespoons balsamic vinegar

- salt to taste


Preheat oven to 200 degrees C. Place a pot with abundant salted water over high heat and cook the scallions for 1 minute. Drain the scallions and reserve 1 cup water. Place a large skillet over medium heat, pour 2 tbsps extra virgin olive oil, and place the beef fillet. Roast beef fillet on all sides. Cover and bake for about 20 minutes. Remove from fire and keep warm. Bring the reserved water and the wine to a boil for about 5 minutes. Reduce the liquid mixture till 1 cup and season with salt. Heat the remaining olive oil into another large pan and add the boiled scallions. Cook for 10 minutes, add the balsamic vinegar and continue cooking for other 10 minutes. Clean, wash, drain and place the spinach in a pot with a little water and salt. Cook over medium heat for 3-4 minutes and add the heavy cream. Season with salt if necessary. Preheat the wine sauce. Slice the beef fillet. Place the spinach cream into each plate, then the sliced beef fillet and top with 4 scallions. Sprinkle with the wine liquid and season with pepper. Serve warm.
