Baked Meatloaf Recipe

600g - minced veal meat

60g - minced ham

300g - champignon mushrooms or potatoes

200g - dried bread

3 - tbsps bread crumbs

2 - cups milk

3 - eggs

3 - tbsps all-purpose flour

2 - 2 cups extra virgin olive oil

5 - large ripe tomatoes, peeled and cubed

1 - garlic clove

3 - tbsps fresh chopped parsley

- salt and pepper to taste


Preheat the oven to 180 degrees C. In a bowl place the bread and pour the milk. Let the bread there for about 5 minutes, drain with your hands and place it in a another bowl. Add the minced veal meat, eggs, the ham, season with salt and pepper. Mix all very well and prepare the meatloaf. Sprinkle with the bread crumbs and then with flour and place the meatloaf in a lightly greased baking dish. Heat the oil in large sauce pan, add the mushrooms or potatoes, the tomatoes, garlic and the chopped parsley. Cook for about 5 minutes and place all in the baking dish. Bake the meatloaf for about 1 hour, or until the meatloaf results lightly brown but not burned. Serve the meatloaf immediately or at room temperature.
