Vegetable Hamburger Recipe

Healthy thanks to vegetables presence, easy to prepare, the vegetable hamburgers are perfect to convince the children to eat vegetables and at the same time to use are the ingredients that we have in our kitchen. Once you try this healthy and tasty Vegetable Hamburgers Recipe will never stop preparing it.

2 - medium potatoes

3 - carrots

200g - broccoli

8 - grilled bread slices

- butter or extra virgin oil

- bread crumbs

- freshly salad to accompany

- salt and pepper to taste


Clean, wash and peel carrots and potatoes. Clean broccoli too and cut all these vegetables into small pieces. Cook steamed and just they are tender enough. Mash with a fork, reducing then to a mush. Place the prepared vegetables in a large bowl, add the beaten egg, the bread crumbs ( as necessary ) to form a thicken consistence, season with salt and pepper.Knead the mixture with your hands. On a flour-dusted surface, divide and shape the mixture into four equally sized patties (roughly 2cm thick). Pop onto a tray and place in the fridge for around 30 minutes to firm up. Place vegetable burgers on a baking sheet covered with baking paper, sprinkle with some other bread crumbs and a little butter or extra virgin olive oil. Preheat oven to 200°C and bake vegetables hamburges for about 20 minutes. Remove from oven, grill some bread slices, serve with them and some freshly green salad if you like.
