Stuffed Artichokes with Sausages Recipe

There are many versions to cook artichokes: boiled, fried, grilled, salad, with rice, stuffed, etc. Stuffed Artichokes with Sausages Recipe is the the boiled version, but if you want a more crispy version bake them.

8 - whole artichokes, tops, leaves and stems trimmed

100g - Italian sausage

1 - garlic clove

3 - tablespoons white wine

4 - tablespoons freshly minced parsley

4 - tablespoons bread crumbs

- lemon halves

4 - tablespoons extra virgin olive oil

- salt and pepper to taste


Take the cleaned artichokes, open a little their leaves, season with salt and pepper and sprinkle with 3 tablespoons extra virgin olive oil. Bring a large pot of water to a boil over medium - high heat, add 1 tablespoon of salt and the lemon halves. Add the artichokes and cook for  35-40 minutes, or until a large leaf should come off when gently pulled.  As artichokes cook, prepare the sausage stuffing: Into a large fryng pan add the remaining oil, the garlic clove and the sausage. Cook for some minutes until lightly brown, eliminate the garlic clove, add the white wine and cook until it evaporates. Remove pan from heat, add the minced parsley ( leave a small part ) and bread crumbs, season with salt and pepper and mix all to combine. Place the sausage stuffing between artichokes leaves and serve. Spread with the remaining minced parsley. IF you prefer, you can bake them just for 10 minutes, 200 Degrees C. You can serve Stuffed Artichokes with Sausages with a red wine.
