500g - fresh anchovies

7 - lemons

- lemon for decoration

- extra virgin olive oil

- dry flakes of chilli pepper (optional)

- fresh thinly chopped parsley (optional)

- salt to taste


Clean anchovies, removing the head and the interiors ,then gently flatten anchovies open with your thumb. Tease the backbone away from the flash, leaving the tail intact. Leave the anchovies under gently running water for about 30 minutes and drain them well. Take a terrine, arrange a layer of anchovies, season with salt, spoon over some of the lemon juice . Continue with the other anchovies layers and the lemon juice until all of them have been used. Cover the terrine, place it in the fridge and leave the anchovies to marinate for at least 4 hours. When you want to serve them, drain off lemon juice and arrange on a serving plate. Drizzle the extra virgin olive oil and sprinkle dried chill pepper flakes and parsley (optional). Arrange wedges of lemon around the plate for decoration and serve.
