Spinach Risotto Recipe

2 - cups uncooked long grain rice

500 g - 500 g spinach, washed, drained

130 g - butter

1 - onion, finely chopped

5 - tablespoons butter

60 g - Parmesan cheese

1 - cup white wine

1 - cup chicken broth

- - salt and pepper


In a bowl bring the water to a boil, salt it and boil the spinach for 5 minutes. Drain and chop finely. Place a sauce pan over medium heat and melt half of the butter, add the spinach, parmesan, season with salt and pepper. In a baking dish(medium heat) place the remaining butter, add the onion and brown for about 5 minutes or until it is tender. Add the rice( medium-high heat) and brown for 3-4 minutes mixing again and again. Pour the wine and mix continually until it evaporate. At last add the chicken broth and cook for 15-20 minutes, until the rice is tender. Mix with the spinach,the parmesan, season with salt and pepper and serve warm
