Risotto with Mushrooms and Sausage Recipe

RICE is one of the best cereals, that is used to prepare salted dishes and various sweety cakes, as well. Risotto with Mushrooms and Sausage Recipe is one of that salted versions, which is perfect to serve especially when organizing a great dinner.

500g - rice, cooked

2 - large zucchini

5 - sausages ( Italian sausages )

200g - mushrooms

1 - medium ripe tomato

1 - garlic clove

1 - small onion

2 - tablespoons fresh chopped parsley, optional

- extra virgin olive oil

- salt

- pepper or crumbled chilli pepper (optional)


Cook the rice according to the package directions and as rice cooks, prepare the sausage -zucchini sauce. Cut all the vegetables lengthwise. Put a large frying pan over medium heat, add 4 tablespoons olive oil, add the garlic clove ( chili pepper, but it's optional), brown for 2 minutes, remove from oil. Firstly add zucchini, cook for 2-3 minutes, add onion, cook for 2 minutes, add mushrooms, cook for 3-4 minutes, add tomato, season with salt, add 1/2 glass of water and cook for 15 minutes, over low heat. When the sauce is ready (lightly thick), serve the rice warm into plates and top with the prepared SAUSAGE - ZUCCHINI sauce. If you desire spread with grated Pecorino / Parmesan cheese and freshly minced parsley.
