Risotto with Beans and Sausage Recipe

2 - cups risotto rice

2 - cups pork spicy sausage, cut into 1/3 inch pieces

1 - bay leave

1 - tablespoon freshly minced rosemary

4 - tablespoons extra virgin olive oil

2 - tablespoons butter

4 - tablespoons Parmesan cheese, grated

2 - scallions, finely chopped

1/2 - cup can beans, rinsed and dried

4 - cups boiling water

- salt and pepper to taste


In a casserole containing the boiling water add the rice and the bay leave. Cover tightly with a foil and boil for 10-12 minutes. Remove from fire, eliminate the bay and let the rice rest as you prepare the other ingredients. In a a saucepan fry the sausages(medium heat) for 3-4 minutes and lay out them into a plate for the moment. Into the same saucepan where you fried the sausages brown the scallions, add the rosemary and the beans. Mix all attentionaly and brown for about 5 minutes. Season with salt and pepper. At last add the sausages and mix. Cream the rice with the butter and the Parmesan and place in a serving plate. Garnish with the sausage mixture and serve warm.
