Rice with Chicken and Shrimps Recipe

Rice with Chicken and Shrimps Recipe is a typical Indian dish, in which its ingredients are: chicken, shrimps, basmati rice and curry. This type of dish can be prepared for a really special dinner and the result will be very enjoyable.

250g - basmati rice

1 - small onion

4 - cloves

- extra virgin olive oil

- salt to taste

- boiling chicken broth or water

500g - chiken meat, boneless and skinless

400g - cleaned shrimps

6 - tablespoons extra virgin olive oil

2 - tablespoons powdered curry

1 - celery stalk

1 - onion

2 - carrots

200g - greek yogurt

2 - garlic cloves

- salt to taste

- boiling water or broth


Place a large pan over medium heat, pour in 5 tablespoons extra virgin olive oil, add chicken meat ( skin and peel removed, small cubed ) and cook for about 10-12 minutes, until tender. Peel, and chop finely 1 onion, the celery stalk and the peeled carrots. Add all chopped vegetables to the pan and continue to cook for other 10 minutes over gentle flame. Add the curry, season with salt, stir well and continue cooking for other 10-12 minutes, adding one ladle of boiling broth or water. Meanwhile chicken with vegetables and curry cooks, tuck into the sides of the other onion the cloves and brown in a large frying pan just for some minutes with 4-5 tablespoons extra virgin olive oil. Add basmati rice, brown for some minutes and then add the boiling broth or water ( a little at a time ). Cook until the rice is cooked and dry, but be careful that the rice do not stick to the pan. When chicken is tender, add the cleaned and peeled shrimps, continue cooking just for 3 other minutes and then add the greek yogurt. Stir to dissolve and incorporate with the other ingredients, season with salt as necessary and remove from fire when the sauce results thick. Arrange rice into individual plates and garnish with the prepared curry chicken - shrimps mixture. Serve immediately.
