Easy Seafood Risotto Recipe

INGREDIENTS


400g - Arborio rice

400g - mussels, freshly and cleaned

400g - clams, freshly and cleaned

300g - dark shadows, cleaned and cut

200g - freshly shrimps( must be podded)

1 - onion, chopped

1 - garlic clove

1 - tablespoon minced parsley

1 - carrot, finely chopped

1 - celery shank, finely chopped

1/2 - cup extra virgin olive oi

1/2 - cup white wine

1 L - fish stock

- salt and freshly ground black pepper


DIRECTIONS


Set a pan over medium heat and pour 3 tablespoons of oil, add garlic and brown for 2 minutes. Add mussels, clams and cook for 10 minutes, or until they're totally opened. Conserve their juice and pod most of them. Leave some with the shell to decorate the plate. In a deep frying pan heat 3 tablespoons of olive oil and add all the minced vegetables, add the dark shadows and brown for 3 minutes. Pour in wine and cook until it is evaporated. Stir in rice and brown, stirring for 3-4 minutes. DO NOT LET RICE BROWN. Add ¼ of the fish stock, which must be hot boiling and stir until it is all almost evaporated. Add again ¼ stock and let evaporate. Continue in this way until the rice results tender, about 20 minutes. Season with salt and pepper. Heat the remaining oil in a frying pan, place the shrimps, cook for 2-3 minutes, add mussels and clams and cook for other 2 minutes. At last stir in all the ingredients with the rice and mix carefully. Cook for other 2 minutes and remove from heat before all the liquid has completely evaporated. Garnish with the minced parsley, the seafood fruits with shells, that we left at the beginning of the recipe and serve warm.
