Beans and Rice Recipe


Beans and Rice Recipe is a really nutritious dish, commonly eaten for lunch. They can be served side by side or mixed, as in this recipe. You can serve this first dish just in this way or with a topping of meat or chicken if you prefer. Beans and rice together make up a complete protein and is a dish which doesn' t need spending a lot of money to by its ingredients.

INGREDIENTS


2 - cups long grain rice

1 - cup dried red beans

90 g - butter

2 - tablespoons extra virgin olive oil

1 - white onion, finely minced

60 g - diced bacon

60 g - parmesan cheese, grated

1 - tablespoon minced freshly basil

1 - tablespoon minced freshly parsley

1 - garlic clove, finely minced

3 - large ripe tomatoes, dried and peeled

1 - cup red wine

1 - cup chicken/beef broth


DIRECTIONS


Place beans in a large round pot, add enough water to cover the beans and soak over night. REMEMBER to discard water after overnight soaking. Boil the beans in cool water for 2 hours, until they are tender. In a large pan(medium heat) melt 2 tablespoons of butter, the olive oil, add the minced onion, bacon, parsley, basil, garlic and cook for abut 5 minutes. Add the tomatoes and cook for other 10 minutes mixing continually. Season with salt and pepper. Unglue the beans and place them in the pan, adding the rice and mix again and again. Pour the wine until absorbed and add the broth, boiling for about 20 minutes. Add the remaining butter and sprinkle with the parmesan cheese. Serve warm.
